Corn Pudding
The poor man's corn souffle
Ingredients
- 4 cups of frozen corn
- 4 large eggs
- 1 cup whipping cream & 1/2 cup milk (can use only milk as well)
- 3 Tbs. sugar
- 1/2 stick of butter, room temperature
- 2 Tbs. flour
- 2 tsp. baking powder
- Optional: Handful of shredded cheddar cheese
- Optional: sliced jalapenos for added spice
- Salt and pepper to taste
Directions
- Preheat oven to 350
- Butter 8×8 baking dish
- Blend all ingredients in blender or food processor until almost smooth. I keep 1/2 cup of corn out and add after blending
- Optional: Add cheese and jalapenos after blending if you so desire
- Pour batter into prepared pan and bake until top is set & lightly brown, about 45 min
